Each month we’ll be sharing what’s happening in the vineyard and winery with guest appearances from our whole team: Fernando Mora MW (everywhere!), Francisco Latasa and Ana Jiménez (in the office) and Mario López (mainly out in the vines).  

One of our bugbears is raisined fruit and we do anything to avoid it. The trouble is, raisins taste the same, whether they are dried up Garnacha from Campo de Borja, desiccated Monastrell from Jumilla or even overripe Pinot Noir berries from the Côte de Nuits, so you just get jammy, stewed fruit rather than any sense of place. We want the crunchy, fresh fruit of perfectly ripe, crisp Garnacha so Mario and Fernando are excited about our latest toy, a vibrating sorting table. Made of stainless steel it offers a hygienic way to introduce a second phase of selection – with four people stationed around it to sort the grapes, which are already hand selected and picked in the vineyard – upon their arrival at the winery. It also has a grid so that any must from lightly crushed berries will drain away, preventing fermentation from starting prematurely. Another reason why our wines will continue to get better and better.
